  • 4 Cups Water
  • 1 teaspoon olive oil
  • ½ cup Carrots - finely chopped
  • ½ cup Capsicum - finely chopped

  • ¼ cup – Pea
  • 1 teaspoon Garlic - finely chopped

  • 1-2 teaspoons of coriander - finely chopped
  • 1-2 teaspoons of black pepper
  • Salt as per taste


Method to prepare Vegetable Soup

  1. Heat the oil, then add the onion and garlic, cooking for three to four minutes total.
  2. Fill the pan with water once you've added all the chopped vegetables.
  3. To thicken the soup, add 1/4 cup of cornflour slurry.
  4. Add salt and black pepper, then blend everything.
  5. Cover the pan with a cover and cook the mixture over a low temperature for about fifteen minutes.
  6. Serve warm.
